A Tribute to Artisan Craftsmanship
It all began in 2012 with three apprentice brewers—three friends experimenting in search of the perfect hop-driven alchemy in the kitchen of their Paris apartment. Before long, requests to purchase their homemade brews started pouring in.
In 2015, the small brewery moved to Butteaux and the business was officially established, becoming one of the first craft breweries in the Yonne department. For the next five years, brewing remained a part-time activity, before a new chapter began in 2020 with the installation of a brand-new 600-litre brewhouse.
Today, the range includes seven beers—three of them award-winning—as well as an organic soft drink.
As the brewery's reputation continues to grow, its commitment to quality, sustainability, and local craftsmanship remains stronger than ever :
- Carefully selected ingredients – organic, flavourful, and locally sourced whenever possible.
- Locally grown organic barley supplied by the COCEBI cooperative, located just 20 km from the brewery.
- Filtered brewing water to remove traces of pesticides and heavy metals.
- No chemical brewing aids used at any stage of production.
- No pasteurisation or filtration, preserving the full character and flavour of our beers.
- Reducing single-use plastic wherever possible.
- Investment in a keg-washing system and a fleet of reusable stainless-steel kegs to promote sustainable distribution.
- Local sales only, with our products distributed within a 60 km radius of the brewery.
- Labels printed locally to support nearby businesses and reduce transport emissions.
- Brewing grains and surplus yeast are recycled and used to feed cattle on a neighbouring farm just 500 metres from the brewery.
